Crust Layer:

  • 1 box yellow cake mix
  • 1/2 cup salted butter, melted
  • 1 large egg

Gooey Layer:

  • 1 (8 oz) package cream cheese, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 cups powdered sugar
  • 1/2 cup cookie butter (Biscoff or similar spread), melted- heat for about 15 seconds and stir until smooth
  • 1/2 cup crushed Biscoff cookies

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9×13-inch baking pan with baking spray and line it with parchment paper.
  2. In a medium bowl, mix together yellow cake mix, melted butter, and egg until fully combined. Press the mixture evenly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth. Add the eggs and vanilla extract, and mix until well combined. Gradually mix in the powdered sugar until smooth. Pour the cream cheese mixture on top of the crust. Drizzle the melted cookie butter onto the cream cheese layer and use a knife to gently swirl the cookie butter into the filling. Add the crushed cookies on top.
  4. Bake for 40–45 minutes, until the edges are set but the center is slightly jiggly. Let the cake cool completely before slicing.
