For The Cookies

  • 2 ¾ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon orange extract

For The Coating

  • ½ cup pastel sanding sugar (assorted colors)

Instructions

  1. Preheat oven to 375°F. Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt.
  3. In a separate bowl, beat the butter and sugar until light and fluffy, about 2 to 3 minutes.
  4. Add eggs one at a time, mixing well after each. Stir in the vanilla and orange extract.
  5. Gradually add the dry ingredients and mix until a soft dough forms.
  6. Place the sanding sugar in a small bowl.
  7. Scoop the dough into 2 tablespoon-sized portions.
  8. Roll each dough ball in the sanding sugar until fully coated.
  9. Place on prepared baking sheets about 2 inches apart.
  10. Bake for 9 to 11 minutes, until the edges are set and the centers still look slightly soft.
  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack to finish cooling.
