Circus Animal Apple Crisp
Ingredients

- 4 cups chopped apples
- 1 tablespoon sugar
- 1 teaspoon cornstarch
Topping
- ¾ cup rolled oats
- ½ cup finely crushed Mother’s Frosted Circus Animal Cookies
- ¼ teaspoon cinnamon
- Pinch of salt
- 2 tablespoons melted butter
- 2 tablespoons milk
- 10–12 whole Mother’s Frosted Circus Animal Cookies, for topping
For Serving
- Vanilla or birthday cake ice cream
Instructions
- Preheat the oven to 350°F and lightly grease an 8-inch square baking dish.
- In the dish, toss the chopped apples with sugar and cornstarch until coated.
- In a medium bowl, combine oats, crushed cookies, cinnamon, salt, melted butter, and milk. Stir until the mixture is crumbly and evenly moistened.
- Sprinkle the topping evenly over the apples.
- Bake for 25–30 minutes, or until the fruit is bubbling and the topping turns light golden.
- Press whole Circus Animal cookies gently onto the warm crisp right after removing it from the oven. They’ll stay crunchy and add that signature frosted finish.
- Serve warm with scoops of vanilla or birthday cake ice cream.
