  • 2 ripe bananas, mashed
  • 2 eggs
  • ½ cup Greek yogurt
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • ½ cup vanilla protein powder (I used Orgain Vanilla)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ cup chopped walnuts
  • ¼ cup Lily’s milk chocolate chips + extra for topping
  • Zero-calorie confectioners’ sugar (I like this one or this one)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with baking spray and line it with parchment paper for easy removal.
  2. In a large bowl, whisk together the mashed bananas, eggs, Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
  3. Gently mix in the oat flour, protein powder, baking soda, baking powder, cinnamon, and salt until just combined.
  4. Fold in the chopped walnuts and chocolate chips.
  5. Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle extra chocolate chips over the batter for a melty, irresistible finish.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the loaf to cool completely before slicing. For a touch of extra sweetness, dust with zero-calorie confectioners’ sugar before serving.
