Banana Sundae Loaf

  • 1 ½ cups mashed ripe bananas (about 3)
  • ½ cup melted butter
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup white chocolate chips
  • ½ cup chocolate chips (milk, dark, or semi-sweet)
  • ¼ cup rainbow sprinkles
  • ½ cup chopped maraschino cherries, drained and patted dry

Instructions

  1. Preheat the oven to 350°F. Grease a 9×5 loaf pan with baking spray.
  2. In a large bowl, whisk together bananas, melted butter, sugars, eggs, and vanilla.
  3. In a separate bowl, whisk flour, baking soda, and salt.
  4. Stir dry ingredients into wet until just combined.
  5. Fold in white chocolate chips, chocolate chips, sprinkles, and cherries.
  6. Spread batter into the pan and bake 50–55 minutes, until a toothpick inserted in the center comes out clean. If the top is browning too quickly, tent loosely with foil.
  7. Cool completely before slicing. Top slices with whipped cream and extra sprinkles for that sundae effect.
