Banana Cream Pie Ice Cream

Ingredients

  • 2 cups cold heavy whipping cream
  • 1 (14 oz) can sweetened condensed milk
  • 3 ripe bananas (mashed until smooth)
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1 cup crushed vanilla wafers

Instructions

  1. In a large bowl, whip the cold heavy cream until stiff peaks form (use a hand mixer or stand mixer).
  2. In a separate bowl, combine mashed bananas, sweetened condensed milk, vanilla, cinnamon, and salt. Stir until smooth.
  3. Gently fold the banana mixture into the whipped cream, being careful not to deflate the air.
  4. Pour the mixture into a loaf pan or freezer-safe container. Smooth the top and add more crushed cookies on top if you’d like.
  5. Cover tightly and freeze for at least 6 hours, preferably overnight, until solid.
