  • 1 cup all-purpose flour
  • 1 cup finely crushed Apple Jacks cereal. Snack Variety found here: https://amzn.to/3LZXgQC
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Extra crushed Apple Jacks for topping 
  • Butter, apple butter, or maple syrup for topping

Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions. 
  2. In a large bowl, combine the flour, finely crushed Apple Jacks, sugar, baking powder, and salt. 
  3. In another bowl, whisk the milk, vegetable oil, eggs, and vanilla extract until combined. Pour it into the dry ingredients and mix until just combined. It’s okay if there’s clumps! 
  4. Spray the waffle iron with non-stick spray and pour the batter into the iron. It should be about 2/3 full with batter and it’ll spread when you press it down. Cook the waffle(s) according to the manufacturer’s instructions. It’s usually no more than 5 minutes. 
  5. Once they’re golden brown and crispy, serve immediately. 
  6. I recommend serving them with butter or apple butter. If you prefer maple syrup (like my daughter does!) just note that it’s a strong flavor so you might not taste the Apple Jacks as much. To bump up the flavor add a sprinkle of apple pie spice or cinnamon sugar. Top with extra crushed Apple Jacks.
