Apple Cider Donut Banana Bread

  • 2 ripe bananas, mashed
  • 1/4 cup unsweetened applesauce
  • 1/3 cup reduced apple cider (see instructions)
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 small apple, peeled and finely diced
  • 1 tbsp butter, melted
  • 1/21 tbsp cinnamon sugar

Instructions

  1. Preheat the oven to 350°F. Grease or line a 9×5” loaf pan.
  2. In a small saucepan, simmer 3/4 cup apple cider until reduced to 1/3 cup. Let cool.
  3. In a large bowl, mix mashed bananas, applesauce, reduced cider, brown sugar, eggs, and vanilla.
  4. Stir in flour, baking soda, salt, and spices until just combined.
  5. Fold in diced apple.
  6. Pour into the prepared pan and smooth the top.
  7. Bake for 55–65 minutes or until a toothpick comes out mostly clean. Top with melted butter and cinnamon sugar. Use 1/2 to 1 tbsp depending on your preference. The more cinnamon sugar, the more it feels like a donut!
  8. Let cool before slicing.
