Crispy Garlic Parmesan Carrots

  • 1 ½ Ibs carrots, peeled and cut into sticks or left whole if small
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)
  •  Zest of ½ lemon, optional

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or foil for easy cleanup.
  3. In a large bowl, toss the carrots with olive oil, minced garlic, salt, pepper, smoked paprika, and Italian seasoning.
  4. Sprinkle half of the Parmesan cheese and toss again.
  5. Spread the carrots in a single layer on the baking sheet.
  6. Roast for 20 minutes, then flip the carrots and sprinkle with the remaining Parmesan.
  7. Roast for another 10-15 minutes, or until the carrots are caramelized and fork-tender.
  8. Sprinkle with fresh parsley and lemon zest
